
Sensory assesssment - novel proteins
Our sensory laboratory kitchen is registered and approved by the Danish Veterinary and Food Administration as a food business operator. Apart from our well-equipped test kitchen, we also have a panel of trained sensory judges in our toolbox. The laboratory is DANAK accredited and includes a sensory judging room with 18 individual boxes that follow the specification of DS/EN ISO 8589.
If you need a sensory assessment of your products in connection with recipe or process optimization, preparing product prototypes, or assessing the utilization of side streams, a professional sensory panel may be the solution.
A professional sensory panel can
- Describe and quantify the products' most prominent characteristics
- Test for differences when changing e.g., process conditions or raw material supplier
- Perform sensory shelf-life testing (with an option of linking to microbiological analyses)
- Evaluate products during a product development phase and thereby guide the development (with an option of testing recipes on a pilot plant scale)
Our panel has many years of experience with ISO 4120 triangle testing and ISO 13299/ISO 4121 sensory profiling. Both the panel and the laboratory are accredited under DANAK.
